Ingredients:
- 1 cup cassava powder
- 1 cup all-purpose flour
- ¾ or 1 cup brown sugar
- 1 tsp annatto powder (dilute in ½ cup warm water)
- 2 cup water
- Grated coconut or grated cheese (for toppings)
- Cooking oil or melted butter (for greasing the mold)
Procedure:
- Grease mold with cooking oil or melted butter so it would be easy to unmold kutsinta later.
- In a mixing bowl combine together cassava powder, all-purpose flour, and brown sugar. Mix well.
- Make a well in the center. Add water and diluted annatto powder. Mix until well combined.
- Pour mixture into the mold about ¾ full. Transfer to the steamer.
- Cover steamer with lid wrap in the cheesecloth avoids water dripping to the kutchinta.
- Steam for 12-15 minutes over medium heat or until the toothpick inserted comes out clean.
- Remove kutsinta from the steam and let it cool before removing from the mold.
- Serve with grated coconut or grated cheese on top.
