This is the step-by-step procedure on how to make delicious Buko Pandan Graham Float Recipe.
INGREDIENTS
- 330g graham crackers
- 740ml all purpose cream (chilled overnight)
- 25g buko pandan gulaman
- 1/2 cup white sugar
- 2-3 tsp buko pandan flavor
- 1/2 tsp green food color
- 25g white gulaman, unflavored
- 1 sachet powdered buko juice
- 4 cups water (buko pandan gulaman)
- 4 cups water (white gulaman)
- 1 tsbp gelatine, unflavored and clear (optional)
- 1/8 cup hot water (for gelatine)
- 500 ml clear packs
PROCEDURE
(1) Gulaman
Buko Pandan Gulaman
Dissolve gulaman in 4 cups water (heat off). Add sugar. Turn the heat on and continue stirring until it boils. When it boils turn the heat off. Transfer into a pan/deep dish. Set a side and let it set. Cut into small cubes.
Buko Gulaman
Dissolve white gulaman in 4 cups water(heat off). Add powdered buko juice. Turn the heat on and continue stirring until it boils. When it boils turn the heat off. Transfer into a deep dish. Set a side and let it set. Shred buko gulaman.
(2) Graham Float
- Combine Gelatin and hot water. Set aside.
- Whip all purpose cream on high speed until doubled.
- Gradually add condensed milk. Whip for another 3-5 min.
- Add dissolved Gelatin and mix well.
- Get 1 1/2 cup cream mixture.
- Add Buko Pandan flavor and green food color.
- Pour Buko Pandan cream mixture into the plain cream mixture.
- Fold in mixture 4-6 times.
(3) Assembly
- Arrange graham crackers into the container.
- Add 1/2 cup of Buko Pandan cream mixture.
- Add cubed gulaman and shredded gulaman.
- Add second layer of graham crackers.
- Add another 1/2 cup of Buko Pandan cream mixture.
- Add toppings.
- Chill overnight.
