Buko Pandan Graham Float Recipe


This is the step-by-step procedure on how to make delicious Buko Pandan Graham Float Recipe.

INGREDIENTS

  • 330g graham crackers
  • 740ml all purpose cream (chilled overnight)
  • 25g buko pandan gulaman
  • 1/2 cup white sugar
  • 2-3 tsp buko pandan flavor
  • 1/2 tsp green food color
  • 25g white gulaman, unflavored
  • 1 sachet powdered buko juice
  • 4 cups water (buko pandan gulaman)
  • 4 cups water (white gulaman)
  • 1 tsbp gelatine, unflavored and clear (optional)
  • 1/8 cup hot water (for gelatine)
  • 500 ml clear packs

PROCEDURE

(1) Gulaman

Buko Pandan Gulaman
Dissolve gulaman in 4 cups water (heat off). Add sugar. Turn the heat on and continue stirring until it boils. When it boils turn the heat off. Transfer into a pan/deep dish. Set a side and let it set. Cut into small cubes.

Buko Gulaman 
Dissolve white gulaman in 4 cups water(heat off). Add powdered buko juice. Turn the heat on and continue stirring until it boils. When it boils turn the heat off. Transfer into a deep dish. Set a side and let it set. Shred buko gulaman.

(2) Graham Float
  1. Combine Gelatin and hot water. Set aside.
  2. Whip all purpose cream on high speed until doubled.
  3. Gradually add condensed milk. Whip for another 3-5 min.
  4. Add dissolved Gelatin and mix well.
  5. Get 1 1/2 cup cream mixture.
  6. Add Buko Pandan flavor and green food color.
  7. Pour Buko Pandan cream mixture into the plain cream mixture.
  8. Fold in mixture 4-6 times.

(3) Assembly
  1. Arrange graham crackers into the container.
  2. Add 1/2 cup of Buko Pandan cream mixture.
  3. Add cubed gulaman and shredded gulaman.
  4. Add second layer of graham crackers.
  5. Add another 1/2 cup of Buko Pandan cream mixture.
  6. Add toppings.
  7. Chill overnight.
